Iberico Ribeye Steak from the Loin (Chuleton) comes from FERMÍN's Ibérico herds in La Alberca, Salamanca — the same free-range Black Iberian pigs behind the brand's award-winning cured hams, shipped fresh rather than cured.

Cut: Chuletón — a thick rib chop from the loin, built for the grill.

Storage: Ships fresh or frozen depending on availability. Refrigerate immediately on arrival and use within 3–4 days, or keep frozen at 0°F and thaw in the refrigerator before cooking.

Thawing & cooking

Storage: refrigerate on arrival at 34–38°F and use within 3–4 days, or freeze at 0°F for up to 6 months. • Thawing (if frozen): keep sealed and thaw in the refrigerator 24 hours; or submerge the sealed pack in cold water, changing every 30 minutes. Cook within 3 days of thawing. • Grill: sear over high heat 4–5 minutes per side, then move to indirect heat to 140–145°F. • Pan-sear & oven: sear in cast iron, then finish at 400°F for 6–10 minutes depending on thickness. • Rest 5 minutes; season with coarse salt only.

Ibérico is safe and best served slightly pink: pull at 140–145°F and rest 3–5 minutes (USDA recommends 145°F). • Render the fat edge by standing the chop on its side in the pan. • Pairs with Garnacha.
