Ibérico Pork Mini Collar (Mogote) comes from FERMÍN's Ibérico herds in La Alberca, Salamanca — the same free-range Black Iberian pigs behind the brand's award-winning cured hams, shipped fresh rather than cured.

Cut: Mogote — a smaller muscle from the collar area, flavorful and well suited to slow cooking.

Storage: Ships fresh or frozen depending on availability. Refrigerate immediately on arrival and use within 3–4 days, or keep frozen at 0°F and thaw in the refrigerator before cooking.

Thawing & cooking

Storage: refrigerate on arrival at 34–38°F and use within 3–4 days, or freeze at 0°F for up to 6 months. • Thawing (if frozen): keep sealed and thaw in the refrigerator 24 hours; or submerge the sealed pack in cold water, changing every 30 minutes. Cook within 3 days of thawing. • Slow roast: salt ahead, sear all sides, then roast at 275–285°F for 2½–3 hours until a fork twists with no resistance. • Grill: slice into 1-inch steaks and grill hot 3–4 minutes per side to 145°F. • Braise: brown, then cook covered with wine, garlic and paprika at 300°F for 2½ hours.

Ibérico is safe and best served slightly pink: pull at 140–145°F and rest 3–5 minutes (USDA recommends 145°F). • Serve sliced thick with roasted peppers, or pulled in buns with pickles.
