Cut: Cabecero — the marbled neck-and-shoulder muscle, good for slow roasting or cutting into steaks.
Storage: Ships fresh or frozen depending on availability. Refrigerate immediately on arrival and use within 3–4 days, or keep frozen at 0°F and thaw in the refrigerator before cooking.
Thawing & cooking
Storage: refrigerate on arrival at 34–38°F and use within 3–4 days, or freeze at 0°F for up to 6 months. • Thawing (if frozen): keep sealed and thaw in the refrigerator 24 hours; or submerge the sealed pack in cold water, changing every 30 minutes. Cook within 3 days of thawing. • Grill as steaks: cut 1-inch thick, grill over high heat 3–4 minutes per side to 140–145°F. • Roast whole: sear, then roast at 300°F to 145°F for a juicy, pink center — or low and slow to 195°F to pull. • Smoke at 250°F to 195–200°F for pulled Ibérico.
Ibérico is safe and best served slightly pink: pull at 140–145°F and rest 3–5 minutes (USDA recommends 145°F). • Season simply: coarse salt, pimentón and olive oil. • Pairs with Rioja or Ribera del Duero.
